A premium Japanese omakase restaurant in Paris is looking for a skilled and passionate Sushi Chef (Itamae) to join its team.

The restaurant focuses on traditional Japanese techniques, seasonal seafood, and a high-end omakase experience.

Responsibilities

  • Prepare sushi, sashimi, nigiri, and omakase courses to the highest standards.
  • Handle and prepare fish with precision and respect for traditional Japanese methods.
  • Maintain exceptional quality, consistency, and presentation.
  • Contribute to seasonal menu development and daily specials.
  • Ensure compliance with hygiene and food safety standards.

Requirements

  • Japanese sushi training or significant experience in authentic Japanese sushi restaurants.
  • Experience in omakase, Edomae sushi, or fine dining Japanese cuisine.
  • Excellent knife skills and fish preparation techniques.
  • Strong attention to detail and commitment to quality.
  • Professional attitude and team spirit.
